Ok, I have a choice between a couple cruels, but which to take?

Cruel Hydra Edge
Cruel Mythical Sword of Amplify Damage
Cruel Beserker Axe
Cruel Small Crescent of Trancendance
Cruel Cryptic Sword

Their ED is basically the same except small crescent is high and mythical

If u socket hell is the number of sockets random?

For socketing, you get 1 or 2 sockets at random (I think that's how it works), unless the base item type only allows 1. The difficulty you socket in does not matter for the amount of sockets you get. For which item would be the most powerful, we would need to know more about your gear. How much IAS you have, for instance. And what skills will you be using?
