Blizzard just posted some information on the new Jewelcrafting profession that will be added with the Burning Crusade. It even has a sample interface that lets you customize some socketed armor to see what jewelcrafting will be like.

Was glad to see you could replace a gem in a slot, similar to enchanting. Some of these gems sound hard to get, and I'd hate having a 0/1 item for months just waiting for that one gem.
Trade yourself in for the perfect one. No one needs to know that you feel you've been ruined!

Rogues obviously want to put 3 perfect emeralds into their armor, and socket Shael-Shael-Shael into their weapons ;)
