I love using Mind Vision to scout ahead for things. Useful for everything from tracking patrols to determining where certain things are ahead of time or if certain spawns are up. Also, MVing on a patroller is a good way to extend the range of your MV in places with a lesser mob population. It also served very well to scout while hiding and waiting for an opportunity to ambush the Barov at the Bulwark.
I also love being the back seat puller. I have even had situations where I have known the pulling strategies in an instance as well as the actual puller and we could work together on pulls. It's always good to have a second set of eyes calling out what is coming on a pull before the rest of the group can see it (when pulling between rooms). This allows everyone to have an idea of what they are facing ahead of time and it is easier for the priest to call it out than it is for the puller to worry about calling it while pulling.
And you can always just have fun with it too. This is another one of those utility spells that you can do just fine without ever using, but it has many applications if you think about it.
