What purpose could that possible have?Yep, that's a neat trick. I've been using it lately to help guildies with the documents in LBRS for the Warlord's Command quest. I spend a lot of time parked in BRS, so I'll usually pop into the instance while the group is en route and see if it's worth killing our way to Omokk and Voone for the document spawn. I can't see the documents as an active item (one that I can pick up) since I've done the quest, but I can see if there are any documents to be checked at Omokk, for example. We can save a bit of time that way, which is nice.
I have a technique I use extensively, especially in instances, whereby I 'chain-scout'. This is the act of casting Mind Vision over and over to dig deeper into the instances.
I talked to one fellow in guild who has gone MV travelling across the continent... from UC to Stormwind. :)

I also use it just for curiosity's sake when we're pulling in MC or places like that. It ignores line of sight, so I can just select the puller for the raid and cast MV to see how the pull is going. And if I want to joke around with the other priests that are doing that, we'll sometimes cast dispell magic on each other, which gets rid of the mind vision. :)
I play on a PvE server, so this might be different from playing on a PvP server, but one thing that I've noticed is that you can flag for PvP from casting MV on flagged NPCs. I haven't done it lately, I don't know if it's changed since I discovered that.
And now that I think about it, I wonder if I could cast MV on a flagged player from the opposite faction and follow them across an instance boundary... or on a griffin ride, or something like that. Hhmm. Might be an interesting tool for setting up ambushes on a PvP server.
Oh, and what happens if you cast it on a rogue that stealths or vanishes? I might have to head to TM and try that out too.
