I think it would be useful for those of us new to the world to compile a list of known gryphon routes and the relative level of aggressives in the area. I'll give it a start, but I'm only lvl 26 and haven't seen much.
IF<--->SW (none)
IF<---> the loch (15)
IF<---->wetlands(25)
SW<--->duskwood (19)
SW<---->redridge(15)
SW<----->westwood(13)
That's all I know right now. Would love for folks to add to this.

Especially now that griffons, hippogryphs, bats, and wingriders have moved from a "hub" transportation system to a "spider web" transportation system, such a list would be very long and I'm not sure what the benefit of it would be. What were you looking for from such a list?

You are missing flightpaths to Winterspring for Horde and Moonglade/Winterspring for Alliance (maybe more, not sure).

Might as well chime in with the Wind Rider (read: Wyvern) routes that I passed along on my foray in the Stress Test.

Forgot to say thanks! The map with the routes was very helpful. It gives me goals to reach, like running to booty bay at level 29 to get the route as well as all the access to things there.
