There's probably more powerful and efficient builds that will 'pwnz', but I personally had fun playing a few frost zealots. They're not invincible, especially against cold immunes or monsters that cannot be slowed via Holy Freeze, but they're not exactly pushovers either.

There's a few guides you can find through google, but for me this is one of the better guides that I've read.

Even though I'm not interested in the ladder part, it's still fairly applicable. And it doesn't have the usual 'you must get a BotD and Enigma and Infinity etc etc' type of shopping\wish list.
If you really want to get the absolute bare bones of the build, iirc it's something like:
-4 Zeal
-20 Holy Freeze
-20 Resist Cold
Where the rest of the points goes depends on your preference, and can be pretty flexible.
