Using the 2-ramp trick, but with the windshield removed.
Without the windshield, the truck has better acceleration for jumping over the guy, and doesn't bounce back from the wall quite as much.
Edit: I have it tuned now to do 151 at several different speeds, with and without windshield, but without changing anything else. Neat thing is that in between the "safe" speeds are speeds that result in considerable damage being inflicted.
Edit two: I managed to get the damage down to 6 points. I don't think there is any way to get a more gentle set down, his feet land on one ramp and his head gets supported by the other ramp so it doesn't have too far to fall. It's a good thing that they don't score damage from heart attack, because the truck does some wild moves to manage to miss hitting him. :)
