The hats alone (which are T5-quality) is reason enough to level Engineering to 350.
You can also gather motes from gas clouds, I believe.
By the way, I wouldn't give up on the Moonkin that quickly -- at least if you hadn't taken the time to gather gear. At level 40, you need some semblance of gear in order to function well. (Though personally I don't like playing Balance... but that's a preference; some people are Balance for life.)
